Back Up `n Punt Poppers

The recipe said to wrap bacon around the cheese-filled jalapenos & bake 15 minutes at 400 degrees.

Notsomuch.

After twenty minutes in the hot oven, the bacon had barely begun to sizzle, the peppers were cooked just right, and the cheese melted into nothing. Time to back up `n punt (or throw it all out & start over another day).

The twisted semi-cooked bacon went into a frying pan, where it promptly burned. Rewind & replay on the bacon. The peppers went into a pie dish where they were covered in new cheese. Mostly done bacon covered the peppers along with another sprinkle of cheese. Back to the oven for 5 minutes at 350, and voila! Punted Pepper Popper Casserole. Presentation was a bit lacking, but the flavors were intact.

(oh, and the appetizer became the main course, the salad course became the appetizer, the main course got postponed, and dessert was yummy – how can you go wrong with ice cream?)
